No worries! I understand that it's a weird, fussy sort of concept. When I've played Doul before in other games, I've really downplayed his abilities - much like in his canon - it's often strongly implied that he can do these things, and it's obvious that his thought processes are pretty alien, but actual, obvious, tangible proof is rarely seen.
In game, the only time he'd really do anything deeply weird would be if he had to fight with the Might Sword turned on. Otherwise, he'd just have a vague, general sense of what opportunities would be available to him - e.g. should he go left or right when coming to a hallway juncture. The trouble with probability mining is that once you get beyond the most obvious choices, is that there's an almost infinite amount of information to process. For example, he's a terror at poker or chess, because those have limitations, rules, and structure, but he has to navigate more complex systems pretty much just the same as the rest of us. Using recent events as an example, he wouldn't have known that the bridge takeover would go poorly or that they'd be let out with enough time to run.
I'd be happy to say that the ship itself and/or NPCs can shield or warp probability, that's totes fine with me, but I would like to leave him his mojo when dealing with other played characters or if he needs to wrassle a manticore.
